I produce beef from pedigree British polled & polled Hereford cattle. Pork & sausages from Tamworth & Gloucester Old Spot pigs and seasonal traditional spring lamb on a small farm on the Buckinghamshire/ Bedfordshire borders.
All of my beef is naturally reared and grass fed and the pigs are free to range outdoors in paddocks all year round.
The British Polled & Polled Herefords graze between Newton Blossomville & Cold Brayfield (Bedfordshire) on grassland which is currently managed under the Higher Level and Entry Level Environmental Stewardship Schemes.
My Gloucester Old Spot & Tamworth pigs range outdoors on a small farm on the outskirts of Sutton St Nicholas, Herefordshire and are looked after by my very first boss and his wife, an association going back over 30 years!
All stock are slaughtered at Mutchmeats in Witney and beef is then hung in my own chiller for a minimum of 28 days depending on what the individual carcass needs. I butcher all my own meat preparing joints & steaks to order and making my own range of steak burgers & sausages.
At events I like to cook my range of home produced Hereford steak burgers, minute steaks (beef), bacon & sausages (pork & beef) so that visitors/guests can taste for themselves good locally produced food. All of our burgers & sausages are handmade, contain over 75% meat and contain no artificial preservatives or additives. For 2012 we introduced our infamous salt beef to the grill trailer menu, the 2013 season saw gluten free burgers & sausages being served at every event. 2014 intorduced the addition of leaves in the form of our very own 'Fully Loaded Hereford Burger to our menu. 2015 & 2016 led to an expanded and individualised menu for a number of events.
New for 2018 - 2018 sees us branching out and further expanding our menus last year we introduced melted cheese to our burgers, this year we are going one step further sourcing a raclette cheese made in the uk we will be using this alongside small batch roasted potatoes roasted in our bespoke charcoal oven to serve with our own recipe dry cured salt beef and dry aged beef steaks - one word - divine.....
I have a purpose built grill trailer to provide this service which adds a professional image but retains a friendly farmer feel as well as a smaller 'pod' for smaller events & hog roasts. With over 8 years experience in the catering industry we are able to cater for all events from arranging event catering for larger events, longer term/seasonal contract catering to a small private or corporate function please do contact us to discuss your individual requirements. We are members of NCASS and will always agree a basic contract (supplied by NCASS) on booking. Should you wish to cancel an event booking deposits are non refundable (we plan our stock ie our feeding & killing of fat cattle & pigs 2-3 months in advance) for long term seasonal contracts/bookings cancelled or aborted prior to the due date compensation in relation to turnover forgone may be due (terms and conditions apply).
