Italian Stallion Casserole

A perfect heart warming winter dish

Serves: 4


  • 6-8 Italian Stallion sausages
  • 1 tin of chopped tomatoes
  • Half a bottle of good red wine
  • A good dash of Port and Brandy
  • 1 tspn of Italian dried herbs (or a Bouquet garni)
  • 2 large onions
  • Button mushrooms
  • 1-2 chopped carrots
  • Vegetable stock cube/fresh tub
  • Season with fresh black pepper


  1. Preheat the oven to 180°C/350°F/Gas Mark 4
  2. Mix the all ingredients in a casserole dish
  3. Cook in an oven 180°C/350°F/Gas Mark 4 for 1 1/2 to 2 hours
  4. Serve with mash potato and fresh vegetables
